What is the Iberian of Campo?
The Iberico de Campo pig that Dehesa Ibérica selects from its partner producers is an Iberian pig, recognizable by its black legs. It is raised extensively in the Dehesa. Otherwise known as Cebo de Campo, it feeds on high quality cereals, grasses and acorns. Lomo The lomo is located on each side of Iberian campo pig spine. It corresponds to the loin of the Iberian pig. It is a lean piece of meat with subtle marbling. It is first marinated in a mixture of spices and then wrapped in natural gut. A maturing time of a few weeks gives it an exceptional flavour. The will then develop an intense aromas and a melty texture.
